Saltbush Leaf Recipes
Blanch by pouring hot water over the fresh leaves then refresh in cold water. Chop & toss with your other favourite salad vegetables and add Kutjera Salad Dressing,
Blanch leaves and arrange to present any meat or seafood dish. A very user-friendly vegetable that retains its texture after blanching.
Saltbush Lamb Wraps
Brush a light coating of olive oil on lamb fillet strips, then sprinkle with Desert Flakes, then wrap in lightly blanched saltbush leaves. Enclose the wraps in foil and grill or BBQ for 10 minutes. Serve with salad or vegetables. Also suitable with fish in the same manner.
Deep Fried Crispy Saltbush
Lightly brush saltbush leaves with egg then toss in corn flower seasoned with salt & pepper. Deep fry until crispy (no more than 1 minute). Great with Asian style foods and entrees.
Lamb Loin with Desert Flakes & Saltbush Filo Pastry
Served with Kutjera Relish
Sear 200g loin of lamb in a hot pan or BBQ then season with a generous amount of Desert Flakes. Pre heat oven to 180 degree C. Brush 2 sheets of filo pastry with olive oil then place upside down onto the other sheet. Place the lamb Ioin on the first 1/4 section of pastry and spread 1 teaspoon of Kutjera Relish over lamb, place blanched saltbush on lamb then fold pastry to make a parcel. Brush with olive oil then bake to golden brown then serve with heated Kutjera Relish.
